INGREDIENTS
1. 2 Cups Heavy Cream
2. 2 Tablespoons Unsalted Butter
3. ⅓ to ½ Cup Powdered sweetener (I use ¼ cup powdered Swerve + ¼ cup Bocha Sweet)
4. Xanthan Gum if needed to thicken more
INSTRUCTIONS
1. Place all ingredients in a medium sized saucepan or skillet (I use a larger saucepan. Larger surface the better – will take less time) over medium heat.
2. Bring to a boil, then reduce heat and simmer until reduced by nearly half, stirring several times to prevent scorching. (You should not have to stir continuously.)
3. This will take between 15-20 minutes.
4. Remove from heat. Sprinkle the surface with 1/8 to 1/4 teaspoon xanthan gum and whisk vigorously to combine. Let cool for 10 minutes. If the milk is not thick enough, whisk in an additional 1/8 to 1/4 teaspoon of xanthan gum. The milk will thicken as it cools.
5. The end product should be thick and gooey.
6. Makes approximately 14 oz. of Sweetened Condensed Milk.

Lulu Chalmers [00:00:11] Hello, I’m Lulu with Pillars of Wellness, and we’re showing you how to make a keto condensed milk, which can be used in chocolate fudge, Twizzler cheesecake and a few other recipes. And this is an extremely simple recipe. You will need two cups of heavy whipping cream, two tablespoons of unsalted butter, and half a cup of powdered sweetener. Now, I like to mix my sweetener, because it kind of reduces some of that aftertaste that some of the sweeteners have. I’m using a quarter cup of powdered swerve and a quarter cup of Boca. Sweet. I’m also setting aside some symptom gum just in case the condensed milk needs to be thickened a little bit towards the end.
Lulu Chalmers [00:00:52] Hey, you’re going to place all of the ingredients in a medium saucepan. I tend to prefer one that’s a little bit bigger, simply because it reduces the time it takes to condense the milk. Obviously you’re not going to put the Zanten gum in there yet, so you’re going to put in the heavy whipping cream, the butter, the sweetener. Those kinds. You’re going to put it on medium until it starts. Until it starts boiling. Once it boils, starts boiling, you’re going to reduce it to simmer. Now this will take approximately 15 to 20 minutes. Once you’ve reduced the heat, and it starts simmering for it to start thickening and you’re going to want to stir it occasionally, you definitely don’t want it to to continue boiling. And normally for simmer, it just means that it’s bubbling a little bit around the edges.
Lulu Chalmers [00:02:16] Okay. So you can see it’s starting to boil. And you shouldn’t have to continuously mix it. But, you definitely want to periodically mix and keep an eye on it because you don’t want it to scorch. And let it boil a little bit more, and then we’ll reduce it down to simmer. So now you can reduce the heat down to simmer. And again, it’ll be good to stir it, simply to again, reduce any scorching. And you will notice that it kind of tends to thicken up around the edges before it’ll thicken in the middle. And you will notice that the color will start changing to more of a yellowish color as it thickens.
Lulu Chalmers [00:03:49] Once this is reduced to around half, go ahead and turn it off. Let it sit for around ten minutes and then check the thickness if this is acceptable. You can go ahead and just let it cool down and put it in whatever container you want. If you would like it to be a little bit thicker, you take this and then come at around an eighth of a teaspoon, and sprinkle it on there. And then you whisk it. Then what you do is you wait for another five minutes and check to make sure that it is thick enough. If it is not, you can add another eighth of a teaspoon and repeat. I’m going to let it sit for a little bit to cool down, and then I am going to put it in its separate container to be used in.
